The Best Chocolate & Raspberry Brownies.

(but like really….)

I swear every single baker on this earth believes they have the BEST chocolate brownie recipe on the planet. Literally if you google it, 187 million search results come up and most of them are different... 🤯

But I’m also one of those millions of people that think they have the best recipe out. I acquired this recipe from an intermediate school friend’s aunt and I have never used another since. These bad boys are decadent in the best possible way - soft, melt-in-you-mouth with  hard chocolate crust on the bottom (or gooey - depends if they are hot or not for those chocolate melts to set) and the perfect addition of raspberries.

Over the years, these brownies have NEVER failed to produce a crap-tonne of compliments and requests.

So if you are a baker on the search of the best brownie, I recommend giving these a go!

METHOD

  1. Preheat your oven to 170ºc fan bake and line a roasting tray with baking paper

  2. Melt butter in a large bowl. Sift in the cocoa powder and then beat together using an electric beater

  3. Add the eggs, sugar and vanilla extract and beat for about 3-4 minutes until the mixture almost doubles in volume

  4. Sift in flour and baking powder and stir with a wooden spoon until combined

  5. Mix in chocolate buttons and melts until combined

  6. Pour the mixture into the roasting tray and spread it out evenly

  7. Dot the raspberries over the top of the brownie mixture and lightly push them in

  8. Bake at 170ºc fan bake for 15 minutes or until it looks like it’s developed a light crust on the top and then switch to 170ºc bake for an additional 30 minutes

  9. Leave to cool and then cut into the desired sizes

  10. Serve with a dusting of icing sugar, hot with ice cream or cold with whipped cream

Hot Tips!

  • Raspberries are optional yo! By all means use boysenberries, strawberries or nothing at all.

  • If you get it out after 45 mins and that brownie is still a little jiggly in the middle, chuck it back in and check it every 5 minutes from then on out until it firms up

  • Make sure you’ve got the crowd to eat it all… This recipe makes A LOT so it’s perfect for large groups or giving as a gift

  • If you don’t have melts, don’t stress. Any form of chocolate button does the trick. I personally like 1 cup dark chocolate melt and 1 cup milk chocolate buttons but you do you boo
